Bo Williamson, the Pit Master and founder, was born and raised in Athens Georgia, so his love of great BBQ has deep roots. Relocating to Jackson eight years ago, he realized the serious need for Southern Style BBQ. In preparation, Bo trained all over the south with some of the best Pit Masters of our time and at the BBQ Institute. Bo furthers his culinary training annually by cooking with the leading Pit Masters from Texas to Georgia, learning their techniques, and developing his own BBQ style along the way. For Bo, his for Southern BBQ isn't just a type of food, it’s his passion.
Patrick Fosgate, aka Chef "Fozzy", has been in the restaurant and food service industry for 20 years. A native of Atlanta, he has worked in fine dining and catering in Atlanta, Charlotte, Denver, and his current home of 10 years, Jackson Hole. Chef Fozzy is a graduate of the Culinary Institute of America in New York. Although classically trained, his true passion for food is BBQ and the home cooking that he was raised on in the South. "I would visit my great grandmother's house in West Point, Mississippi when I was a kid and enjoy everything that she, my grandmother, great Aunts, and of course, my Mom would prepare. From creamed corn, collard greens and stewed pole beans to sweet potato casserole and homemade chess pie. And, of course, BBQ!". “I love to introduce people in the West to true Southern BBQ and using my education and training to create innovative and original sides dishes for our menu". Chef Fozzy looks forward to cooking for you and helping make your next BBQ feast the best you've ever had!
